Hometown Favourites Inspire Memorable Meal for Tapestry Residents
A kitchen at any of the Tapestry communities is filled with a variety of talented individuals that are truly passionate about their work and the food they make for valued residents every day. Led by professional Executive Chefs, Tapestry’s culinary teams aim to create meals that are not only healthy and delicious, but also feature local ingredients and often highlight international flavours that reflect the team’s diverse cultural backgrounds.
At Tapestry at Arbutus Walk, Executive Chef Valentino Pereira and his team recently prepared a culinary surprise for residents that featured traditional Filipino menu items showcasing the cooks’ traditional iconic dishes. With team members Andrew Daniel, Mitchell Mijares and Jeraldine Sarmiento taking lead, the trio connected over their favourite dishes and proposed authentically re-creating them for Tapestry’s valued residents.
“This was a great opportunity to spotlight some of our team members that work very hard every day behind the scenes,” says Valentino. “It was an amazing way to showcase their love for their culture and food, while educating residents about authentic Filipino flavours.”
Some of the evening’s dishes included Beef Bulalo, a hearty soup incorporating beef shank and bone marrow, as well as Chicken Adobo, a sweet and tangy dish made with chicken thighs and served with vegetables and chop suey. And no authentic Filipino dinner would be complete without a delicious Leche Flan, an egg and caramel custard dish which is a fan favourite among the culinary team with many debates as to whose traditional family recipe is the best!
Tapestry’s residents were excited to try the traditional menu features, which for many, proved to be the first time they had enjoyed Filipino cuisine.
“I am proud of my team who put their full hearts into this special evening,” says Valentino. “It was great to see them take the reigns and handle this project, and we are thankful for all the residents who shared this wonderful sampling of our employees’ culture.”
