Tapestry’s Flavour is Authentically Local
When it comes to creating an exceptional culinary experience, Tapestry prides itself on using local products. Buying local supports the regional economy, reinforces our commitment to sustainability and reduces the potential of food shipments being impacted by logistical challenges, which has been a significant concern through the COVID-19 pandemic.
On the West Coast, Tapestry at Victoria Harbour has a strong local focus. Executive Chef James West believes in the importance of supporting family businesses and reducing our environmental footprint, while sourcing the freshest seasonal products.
Victoria Harbour highlights local supplier logos on its menus. “Our residents appreciate knowing that we have established local partnerships,” says Executive Chef James. “Each supplier has a unique story and I am proud to share with residents who appreciate this level of transparency in our latest summer menu.”
In Vancouver, our communities also take advantage of local relationships. At Arbutus Walk, Executive Chef Valentino Pereira sources local seafood whenever possible, uses fresh herbs from the community’s garden and was pleased to share honey from the rooftop bees as part of Arbutus Walk’s fundraising efforts for the Ukraine. At this time of year, he’s looking forward to sourcing fresh trout and offering local strawberries which are deliciously in season in Vancouver.
At Wesbrook Village, Executive Chef Andy Chong enjoys sourcing local produce when available from the University of British Columbia (UBC) Farm, a 24-hectare farm and forest system on the southern end of the campus run by the Centre for Sustainable Food Systems.
At Village Gate West in Toronto, Executive Chef Mitchell Lipperman works with partners who pride themselves on sourcing local fruits, vegetables and meats to ensure freshness and high- quality standards that meet Tapestry’s expectations.
Executive Chef Mitchell is also looking forward to using the community’s rooftop honey after a recent check of the beehives showed that our bees have been buzzing busily at work with a bumper crop expected this fall!
